Serves 3-4
Ingredients
1 & 1/2 cups - Rice
3 cups - Water for boiling rice
Mushrooms (oyster, button or shitake)
4-5 med size pods - Garlic (thinly sliced)
3-4 sticks - Spring Onions (medium chopped)
1-2 med size - Peppers (yellow, red and/or green). Cut them in sticks
1/2 cup - Olive Oil
10-12 - Roasted Peanuts crushed
2 tsp - Soy & Pepper Sauce
2 tsp - Salt
1 tsp - Crushed peppercorns
Method
1) Wash and drain the excess water of rice. Boil the rice and cook till done. Leave aside, spread it and allow it cool for at least 60 mins before using it for the fried rice. Ensure grains are separate and not mushy.
2) Pre-heat oven to 450 F.
3) In an oven tray, toss mushrooms, garlic, spring onions, peppers, peanuts, salt, pepper in olive oil and spread it evenly.
4) Keep checking and stirring every 10 mins.
5) Once the mushrooms, peppers are cooked and burnt slightly, add the rice, sauces and mix it thoroughly. If required add a little oil to avoid the rice from sticking to the tray.
6) After 10-15 mins taste, remove and serve hot.
